I have a tree that will be loaded with apricots. What's the real methode for brandy?

I know that lots of folks in Europe take great pride in making apricot brandy. How is it done? (please don't suggest vodka or shortcuts; I'd like to know the real thing). Is it fermenting, or distilling? Both?
